So,
Super Dad called and he's stopping by to pick up our "5th child" (one of the youth from church who is always over) on the way home, so what do I do for dinner with one more mouth to feed? Than, I remembered that hubby and I stayed up late Sunday night cooking hamburger meat, dividing it up, and freezing in
baggies for when it was time to cook it! One bag we froze we also went ahead and added spaghetti sauce to. Now, I was supposed to precook and freeze the pasta as well (which would be an even bigger time saver), but I have plenty of time since he is being detoured to pick up "Aussie" anyways.
So, we are just getting involved with the freezer meals (which I've wanted to incorporate FOREVER) ... but for today, this Wednesday, it's definitely what worked for me!
BUT ... I totally need more recipes and need to know your tips on being successful at it!! THANKS!!

Sounds good. I also make meatballs and freeze those in a little sauce as well. I use the Make Ahead Meatball recipe at www.allrecipes.com http://allrecipes.com/Recipe/Make-Ahead-Meatballs/Detail.aspx . It makes a lot. They are yummy and really easy to make.
I have frozen spaghetti before(Plain) and after defrosting a quick dip in boiling water it turns out just fine.
Just do a search for "Once a Month Cooking" and you'll find tons of recipes. I don't do the full-blown OAMC thing, which means cooking 30 meals in one day and freezing them. But I take some of the recipes and make them ahead of time. At the very least I try to have my meat ready to go. That is, I cut up my chicken in small pieces, brown my ground beef and cut steaks into smaller pieces for stew or stroganoff. Simply having your meat already prepped when you take if from the freezer is a blessing.
Freezer cooking has saved my life and budget for years!
What I do with hamburger meat?
Taco soup
ground beef 1-2 pounds
taco seasoning
large can of tomato juice
corn 1 cup?
1 small can diced tomatoes
heat all day in crockpot, top with cheese, corn chips, sour cream. Everybody loves it! And it's cheap, too.
